In a typical falling film configuration, the feed fluid enters at the head of the evaporator and is distributed evenly across the inner surfaces of vertical tubes. This distribution is vital; a uniform, continuous liquid film must flow downward under gravity, absorbing latent heat from the external steam jacketed walls.
As thermal energy is transferred, the liquid partially vaporizes. The co-current flow of the vapor alongside the liquid film creates a high-velocity vapor core. This shear stress accelerates the downflow rate, promoting extremely high heat transfer coefficients and minimizing liquid residence times to seconds. This rapid, single-pass processing pathway safeguards volatile components and prevents the degradation of delicate materials like proteins, organic compounds, and complex starch sugars.
