The Role of the Degerming Mill

In the wet milling process, corn kernels are steeped in a sulfur dioxide and lactic acid solution to soften the gluten matrix. Once steeped, the kernels must be broken open to release the germ without damaging it. This is where the degerming mill plays a pivotal role. Unlike dry milling grinders, a wet degerming mill uses a combination of impact, shearing, and compression forces between a stationary and a rotating disc studded with teeth (rotor and stator).

Key Design Parameters for High Yields

  • Tooth Profile & Arrangement: The geometry of the teeth on the discs is optimized to ensure that the kernel is split rather than ground. This prevents the germ from being pulverized, which would lead to oil loss in the starch slurry and complicate downstream separation in hydrocyclones.
  • Adjustable Plate Clearance: Real-time or manual adjustment of the gap between the plates allows operators to compensate for variations in corn moisture, kernel size, and hardness (flint vs. dent corn varieties common in France).
  • Dynamic Balancing: High-speed rotation requires precision dynamic balancing of the rotor assembly to minimize vibration, extend bearing life, and ensure consistent milling gaps across the entire disc surface.

Downstream Integration
